La Raza has just opened this new space in El Prado where the philosophy of “zero kilometer” is embraced
Ispal is the latest adventure of Group La Raza, an air-restaurant located at El Prado de San Sebastian, in the Hosteria del Prado building. The philosophy of its menu is based on the concept “Zero Kilometer”, which consists of denoting products 100% Seville.
With Antonio Bort as executive chef of the restaurant, Ispal has created a full menu highlighting its tasting menu, composed of eleven dishes designed to surprise the guests.
The rest of the menu consists of three sections: “Seville Archeology“, “Our pantry” and “DNA Seville”.
The first section recovers lost local recipes and are adapted to modern dishes, counting on the help of anthropologist Isabel González Turmo.
“Our pantry” explores typical dishes of Seville ́s province, allowing the public to recognize each of the counties through its flavor. While “DNA Seville” rises into its fullest expression in “Km 0”, with ingredients exclusively from local producers such as rice with crayfish and smoked sturgeon from Isla Mayor.
Ispal is turning to the classic restaurant concept, with dining room service and leaving proper time between courses.
The wine list is another of part of its new identity. It is Andalusian, mainly marked by references and fortified wine.
Their desserts, like the rest of the menu, have a 100% Seville character, as demonstrated in one of the most outstanding desserts: “Torrija, incense and orange blossom “.
As for the decoration, it has been completely changed. Offering a cozy space with a mix of classic and modern style interior, combined with neutral tones and green hues; and complemented with both indoor and outdoor greenery, incorporated and well-cared for.
