ISPAL is the original name of the city of Seville dates back to the late 8th century A.C. meaning flat land. Chosen by the founders of Group La Raza as the origin of all things to convey, from the outset, the beginning of a unique experience: relishing Seville in a completely different way through its gastronomy.
ISPAL restaurant is a new business concept launched by Group La Raza, one of the main Andalusian companies specialized in catering and hotel services. A restaurant kitchen 100% Seville, in the hands of our group executive chef, Antonio Rodriguez Bort, who despite his youth, amassed an extensive experience, and numerous professional awards. A chef whose obsession is to make every product shine, and to promote the scope and quality of Sevillian products. A concept in which KM0 kitchen is at its best; whereby the main ingredients of each dish are a product of our province, being an integral part of the menu.
ISPAL restaurant is located in the Hosteria del Prado building, whose interior has been completely renovated to provide a new and welcoming space. The restaurant has a classic decor, predominating neutral tones combined with green hues; and complemented with both indoor and outdoor greenery, incorporated and well-cared for. Definitely a space in which at all times tradition and modernity engage, also reflected in the decoration of the restaurant. An establishment with three perfectly differentiated spaces: Dining room, terrace and VIP area.
As for the dining room, ISPAL has a neat and dynamic service, its tables dressed with white linen tablecloths in a context where tradition and present coexist in perfect harmony. In addition, it boasts one of the most complete wine lists of Andalusian wines nationwide, created by the renowned sommelier, Rafael Bellido. At ISPAL, the Sevillian wines serve a prominent role, also in our catering service. Wines which play a central and fundamental part in the enjoyment of an immersive ISPAL experience. The beverage collection is topped with an extensive cocktail menu, and all cocktails are entirely based on Andalusian cuvees.
The ISPAL restaurant has a cuisine based on the resources provided by its province, both in terms of product and food culture. It is, in fact, the first restaurant in the world cooking 100% Seville. Therefore, ISPAL ́s menu has a unique structure that allows you to understand and enjoy the experience from the first moment:
Seville Archeology retrieves ancient recipes of Seville ́s gastronomy, which had been lost, and adapts them to the present. The history of Seville in every bite.
ISPAL Restaurant DNA Seville: Product quality is essential, that ́s why they have a large number of small local producers, mostly artisan farmers who put care in their craft and provide high quality products. The KM0 concept is carried out to its fullest expression as proven by the hospitality ́s support to small artisans. They do a great job by offering exclusive quality products, including maintaining and recovering species that we otherwise could not enjoy.
Pantry: Although the whole menu is based on products of Seville and Sevillian recipes, they have a special section interpreting typical dishes of its province, and for us to recognize each of the counties by its flavor.

Son muchos los platos de la carta que podríamos destacar pero vamos a hacer una selección de un plato de cada una de los apartados de la carta. Ensaladilla del S. XIX: Arqueología sevillana. Jamón ibérico de bellota de Alanís de la Sierra, regañá suflada, manzanilla de Sanlúcar y agua de tomate: ADN Sevilla. Lubina de esteros de Isla Mayor con su jugo del menudo y quinoa suflada de Los Palacios: Despensa. Albur de Coria del Río en tres pasos: Menú degustación. Y por último, torrija templada caramelizada con toffee de Pedro Ximénez cream, helado de azahar e incienso: Postres.
