ISPAL left me amazed, a concept the city was longing for
ISPAL is a new business concept launched by Group La Raza, Seville ́s benchmark in hospitality for over 85 years. Located in an old hostelry, still active, next to the Prado de San Sebastian.
ISPAL is the restaurant for cooking 100% Seville, in the hands of our group executive chef, Antonio Rodriguez Bort. They have created a concept in which KM0 kitchen is at its best, whereby the main ingredients of each dish are a product of our province as an integral part of the menu. Offering an excellent service and one of the most extensive and complete menus of Andalusian and Sevillian wines, created by the great sommelier Rafa Bellido.
I tried their tasting menu, 100% Sevillian products and I really loved it.
Seville was missing a nice place, classy, and with a good tasting menu, to indulge yourself with the essence of its cooking. ISPAL has got it all; full of fine details and Sevillian soul. What more could you ask for?
Let me start with some details of the tasting menu, not too many because I want you to find out for yourself.
Starters that will draw your attention, especially the butter of extra virgin olive oil and the olives, some tasty fried pork greaves-flavored bread crumbs, a spread of goose from Constantina, and a version of traditionally seasoned creamy mashed potatoes. Ending the “presentation” with a cart of cold and deli meats from the mountains, north of Seville.
Every dish on the menu gets even better. I stick with the mountain piglet with carrots and roasted garlic. SUBLIME!
Continuing with a tasting of 3 artisan cheeses made of Florida goat milk from Espartinas. Very good.
The dessert is also very striking. French toast flavored with orange blossom and incense. Can it be more Seville like?
